Ingredients

1 (10-ounce) Italian cheese-flavored thin pizza crust (such as Boboli) 1 teaspoon cornmeal Cooking spray

3 tablespoons refrigerated pesto with basil (such as Buitoni) 1/2 cup (2 ounces) shredded fresh mozzarella cheese

1/2 cup part-skim ricotta cheese 1/2 cup sliced small tomatoes (such as Campari tomatoes) 1/4 teaspoon black pepper
1/4 cup small basil leaves Crushed red pepper (optional)

Preparation

1. Preheat broiler to high.

2. Place a baking sheet in oven; heat for 10 minutes.

3. While baking sheet heats, place crust on another baking sheet sprinkled with cornmeal. Lightly coat crust with cooking spray. Spread pesto evenly over crust, leaving a 1-inch border; sprinkle mozzarella evenly over pesto. Dollop ricotta, by teaspoonfuls, evenly over mozzarella. Slide crust onto preheated baking sheet, using a spatula as a guide. Broil 5 inches from heat for 5 minutes or until cheese begins to melt. Remove from oven; top evenly with tomatoes, black pepper, and basil. Sprinkle with red pepper, if desired. Cut into 8 slices.

Mom's Homemade Vegetable Barley Soup

Winter is officially upon us...

It's time for warm soup and sitting by the fireplace!

Who would of thought we would have snow up and down the East Coast in October?? Given the cold weather, snow and being stuck inside, we decided to cook up some of Mom's Homemade Vegetable Barley Soup. I had to give her a call because the recipe isn't written down anywhere-- she just kind of throws stuff in and it turns out great.

So here's how you make this healthy, quick and easy vegetable soup:

Ingredients:

1/2 Cup Chopped Onion
1 Clove Garlic Minced
5 Cups Water
2 (14 1/2 oz) Can of Tomatoes (Petite Diced)
3/4 Cup Quaker Quick Barley
1/2 Sliced Celery
1/2 Cup Sliced Carrots
2 Beef Bouillon Cubes
1/2 Dried Basil
1 Bay Leaf
1 Turnip Peeled and Diced
1/2 Cup Frozen Peas

Directions:

In your Xtrema Saucepan, sautee onion and garlic until tender. Stir in remaining ingredients except frozen peas. Cover, bring to a boil. Reduce heat, simmer 10 minutes, stirring occasionally. Add frozen peas; cook about 10 minutes or until vegetables are tender. Additional water or beef broth may be added if soup becomes to thick upon standing.

This pretty simple vegetable soup recipe packs a tasty punch and delivers a healthy warm meal for the coldest of days....

How to Cook Pancakes with Xtrema

Xtrema is all about healthy and green living. We make our products with the customer and the environment in mind. We are always searching for healthy living tips, tricks and great recipes. Recently we came across Runner's Pancakes on Spark Recipes! If you like to get a good workout in then these batch of Pancakes are for you!

Here's how we suggest cooking these pancakes with Xtrema:

Heat your skillet on medium for 60 seconds and then spray on coconut or canola oil. Place batter in the skillet. Flip when the top of the batter bubbles & remove the pancakes when done to your liking.

Runners Pancake Recipe:
1/2 cup uncooked oatmeal
1/2 cup fat free egg beaters or egg white equivalent
1/2 cup fresh blueberries
1 tablespoon honey
Stevia (optional)

Place mix all ingredients in small bowl and blend using a stick blender or can be made in a food processor or stand blender!!! Mix only until berries a slightly broken--2-3 pulses should be sufficient!!!

Let stand 5- 10 minutes to thicken!!! Can be made the night before and cooked in the morning!!!

Use olive oil or spray a non stick pan with non stick spray and heat before adding batter!!! Divide evenly into 3 pancake and cook thoroughly before attempting to turn!!! Cook evenly on both sides and cook even golden brown! Get outside early in the morning for a nice run and then come back and fire up that Xtrema and get cooking.

Xtrema Tomato Pie

Tomato Pie baked in the Xtrema 9" Pie Plate:

Taste the difference baking w/ Xtrema Healthy Cookware!!
Ingredients:
9" unbaked pie crust
1 cup of shredded Mozzarella, divided
4 fresh tomatoes, seeded and chopped
1 onion, chopped
10 to 12 fresh basil leaves, chopped
1 cup of shredded Cheddar cheese
1 cup of mayonnaise
1/2 cup grated Parmesan cheese
Directions:
Prick bottom of pie crust several times with the tines of a fork; bake at 425 degrees for 8-10 minutes in the Xtrema 9" Pie Plate.

Sprinkle bottom of pie crust with 1/4 cup of Mozzarella cheese. Layer with half each of tomatoes, onion and basil; repeat layers. Combine 3/4 cup of mozzarella cheese, Cheddar cheese and mayonnaise. Spread mixture over top of pie; sprinkle with Parmesan cheese. Bake at 350 degrees on bottom rack of overn for 35 to 40 minutes. Let stand for 15 minutes before serving. (serves 6)

Healthy Cookware 101: Is Non-Stick Cookware Safe?

I found this article on non-stick cookware and I thought I would share it. It goes into detail on the evolution of non-stick cookware and how now experts are sounding alarms about the potential health risks of cooking with non-stick metal cookware.

Here is a brief section of the article talking about the various cookware options for consumers;

WORST COOKWARE OPTIONS: Highly reactive materials like synthetic non-stick, aluminum and copper

Non-stick cookware The coating used on synthetic non-stick cookware (even the newer types marketed as “greener” or “healthier”) contains plastic polymers, which when heated, emit noxious fumes that contain chemicals that have been proven to be carcinogenic in humans. I urge you to avoid non-stick pans and utensils at all costs.

Aluminum: Studies have linked aluminum exposure to Alzheimer’s and other cognitive problems. Most experts advise avoiding aluminum cookware, including the newer anondized aluminum cookware, as well as aluminum foil completely.

Copper: Copper cookware has a coating that is supposed to prevent copper from coming into contact with food. However, this coating can wear away over time, allowing the copper itself to come into direct contact with food, which can lead to copper toxicity.

If you still have non-stick cookware in your home, I think it’s a good idea to think about investing in healthier alternatives. There are affordable healthy cookware options out there, and considering that it’s something you probably use almost daily, and that it lasts for years, you can’t really go wrong.

I never knew my food could taste twice as better in ceramic cookware otherwise I would've ordered much longer ago. The set heats evenly and I barely have to use high heat. I can heat things up 30 minutes before serving, and the food stays warm on the table. No running back and forth trying to serve off of the stove! Clean up is a blessing as well because I don't have to scour or scrub. Food and grease washes off with amazing ease with a regular sponge. The only thing I wish Xtrema would include is a silicone lid lifter because the lid does tend to get hot, and it can be kind of tricky trying to pick it up with a regular kitchen mitt. other than that small issue, this set is simply perfect and it has made my life so much easier. I gave away all my other stainless steel cookware but I wish I would've just thrown it away and asked everyone to buy their own Xtrema products. I am a true fan!

I have been making lots of changes in our kitchen in the past few years- we went to stainless for most of our pots and pans...I use a cast iron skillet for a lot of our cooking (easy way to get extra iron in)...and I was really intrigued by the ceramic cookware I have been hearing so much about lately.

Xtrema sent us a 10" Braiser/Skillet with lid to try out. I have to tell you that I LOVE this so so much. Its non-scratch ceramic cookware, so care of it is super easy - but its also great for cooking and baking- I can brown meat in it, I can bake things, braise them, put them in the fridge, the stovetop, the microwave, the oven...even the GRILL (which I haven't tried yet but we do plan to.....

Skiers Toast -- An Xtrema Dessert

Looking for a unique and tasty dessert recipe?? Well, we got just the thing to WOW your guest or to entertain friends and family over the holidays!

Skiers Toast

Ingredients:
~ 2 Cans of crescent rolls
~ 1 Teaspoon of vanilla
~ 16 Oz of cream cheese
~ 1 1/4 Cups of sugar
~ 1 Teaspoon of cinnamon
~ 1 Stick of melted butter

Recipe:
Unroll 1 can of crescent rolls into the bottom of a greased Xtrema 4 Qt Ceramic Oblong Baking Pan . Don't press seams together. Mix cream cheese with 1 cup of sugar and vanilla; spread over rolls. Place second can of rolls over top. Pour melted butter on and top with mixture of 1/4 cup of sugar and 1 teaspoon of cinnamon. Bake for 30 minutes at 350 degrees.

ENJOY!!!

This very tasty dessert recipe has been passed down through the family and we don't know where it came from but we do know that it is Xtrema Good and it will WOW anyone's taste buds!!

Chocolate Chip Banana Bread Recipe

-- This is an old recipe found in a Betty Crocker's Cookbook from 1972. We added an Xtrema Twist using the 1.5 Qt Loaf Pan and a secret ingredient. Here is the Recipe:

■ 2 1/2 Cups all-purpose flour
■ 1 Cup of Sugar
■ 3 1/2 teaspoons Baking Powder
■ 1 teaspoon of Salt
■ 3 tablespoons of Salad Oil
■ 3/4 Cup of Milk
■ 1 Egg
■ 1 Cup of mashed ripe bananas (2-3 bananas)
■ 1 Cup of Chocolate Chips (semi-sweet)
■ Secret Ingredient-- 3 tablespoons of Orange Juice (this keeps the bread moist and tasty)

Heat oven to 350. Grease and flour the Xtrema Loaf Pan. Measure all ingredients into large mixer bowl; beat on medium speed for 30 seconds, scraping side and bottom of mixer bowl constantly.

Pour into Xtrema Loaf Pan. Bake for 55-65 minutes. Remember to allow the bread to thoroughly cool before slicing.

Do you find yourself in the blaah rut of life? Feeling sluggish, tired, bored, or falling into the same rut day in and day out? Well my challenge to you this week is to spice things up! Here are two areas for your “spicing” as you will; your eating, and your workout!

Lets start with eating. Adding peppers to any meal can add zest and flavor to the entrée. Bell peppers are packed with several nutrients. They are a good source of vitamin C, thiamine, vitamin B6, beta carotene, and folic acid. Bell peppers contain a large amounts of antioxidents. When comparing the nutrient values of the different bell peppers, studies have shown that red bell peppers have significantly higher levels of nutrients than green. Red bell peppers also contain lycopene, which is a carotene that helps to protect against cancer and heart disease.

Now that we know why we need to spice things up with peppers, the best way of course is cooking with Xtrema cookware. People that do not like bell peppers raw, usually enjoy them sautéed. The best way I have found to sautee peppers is with the Xtrema 10” Ceramic Skillet because it leaves the peppers skin tender, moist and delicious, and brings out the natural flavor. This is the healthy way to cook.

Start with extra virgin olive oil. Let it simmer in the pan until warm. Olive oil has many benefits and I always use olive oil for cooking because of it’s rich health benefits. Due to its high content of monounsaturated fatty acids and its high content of antioxidative substances, studies have shown that olive oil offers protection against heart disease by controlling LDL ("bad") cholesterol levels while raising HDL (the "good" cholesterol) levels. Bottom line is we need fat in our diet. Olive oil is the good stuff we need.

So start with enough olive oil to cover the bottom of the pan and heat on medium. Slice up the green, red, and yellow peppers. Toss peppers into the olive oil and let simmer until golden and tender. Be sure to stir occasionally. Also add a pinch of sea salt to bring out the flavor. Add to the top of pasta, sandwich, salad, stir-fry or chicken! YUM. Now, onto your workout. Music will always put some bounce in your step! It is crucial to have a good mood boosting beat when you’re working out, and feel free to sing and smile when you sweat! My question is where are you at with your workout? What are your personal goals to focus on? It’s away a good idea to have a goal and a plan. Today, put a little kick into things with what we in BeautyFlex call the Elk climb. First pump up your music, then find a set of stairs. Just as the majestic elk climbs to the peaks of mountains and keeps himself strong, you too are going to imitate that movement by going up and down stairs. Depending on your fitness level, start at a pace where you are comfortable. Eventually you will get yourself up to running up and down the stairs, and then sprinting. You’ll love the results, and toning that occurs in your legs. Plus it will keep you feeling strong and healthy. Finish strong outside while enjoying some sunshine as you go for a walk and enjoy the Memorial Day weekend!

I love trying to live a healthy lifestyle & so I’m very conscientious of what I put in my body & how I treat it. I love to cook & experiment with new techniques & I love sharing the fruits of my labor.

I enjoy the “science behind” of how food can help you -- or how it can harm you. One must learn how to choose wisely to keep their bodies healthy. I am a 100% ingredient list inspector for all my food!

So it is no surprise that I’ve become an ingredient list inspector (so to speak) of products that will help me prepare my food for consumption in a healthy way. Years ago, I threw out my old aluminum & Teflon pans & have been gradually replacing them over the years with healthier choices.

Thank goodness that more & more people are joining the bandwagon of wanting healthier choices in life while also caring for our environment. Manufacturers are urged to improve products without an expense to environment & health.

I have been searching for a long time for cooking pans that are a healthy choice. So thank goodness I stumbled upon Xtrema Ceramcor Cookware - - - ‘green’ for the environment & healthy for the body. As I read the company’s philosophy, how they make their product, & understood why it’s considered green & why there are no harmful metals or chemicals that can leach out that could possibly harm the body, I knew I just had to make my first Xtrema purchase.

I thought I’d start with one item, test it out, and see if it proved to be up to my high standards so I bought the Xtrema Wok to replace my old one. I love my Xtrema wok!

I have been testing it out with many of my standard recipes. I use the wok not only for your typical stir fries, but also for prepping dishes. I’ve made dishes from Singapore Noodle with Seared Chicken, to Vegetable stir fry, to Chinese Vegetable Lettuce Rolls, to vegetarian Pasta Molto Verde, to vegetarian Tamale Pie & many other dishes. So I am using it frequently. I love the fact that you can put it in the dishwasher! It really does clean up wonderfully with ease.

To be honest, I was very surprised at how well the wok cleaned up actually - - - stir fries are messy & if you do cook at high heat…even more the fun to clean. I was concerned about clean up when I did my Singapore Noodle dish since it is more of a dry spice curry….no worries, I couldn’t believe how great the Xtrema wok cleaned! When I was finished, it looked brand new without me having to put in a great deal of effort—I just used a SOS steel wool for a few pass overs; didn’t have to use excessive scrubbing & was done in no time. I still can’t believe I can get away with using steel wool on Xtrema if I need to (I’ve only needed to use it once).

What I also love about my Xtrema Wok is that is light weight. My wrists are not very strong, so for me, the light weight wok is very helpful. Much lighter than my cast iron skillets! The look of the Xtrema is a classic look--- really nice. The size of the wok is your typical size & since I love cooking & using a lot of greens (kale, swiss chard, spinach, collard greens,etc), the Xtrema wok has no problem fitting all of my greens & whatever else I throw in the pan. I’m able to get a really nice sear & caramelization for meats. I fried up mushrooms as a topping for my Pasta Molto Verde recipe---really nice browning on the mushrooms. I have noticed that I am using just a tad bit more of oil when frying up certain foods in the wok –but not much more & am not concerned. I always use healthy fats anyway.

Interestingly, I’ve tested the Xtrema Wok for some non-typical dishes---like poached eggs! I love poached eggs but clean up can be burdensome (I crack an egg into boiling water…). A couple of years ago I bought a 3 qt. non-stick stock pot specifically to poach my eggs---obviously it’s been great for clean because of the non-stick but then I ‘smartened’ up—I now know non-stick pans are just not healthy for you. So I tested poached eggs in my Xtrema wok. They came out perfect---from the runny softness of the yolk to the actual flavor of the egg. So the Xtrema ceramic passed my test here, I will be replacing my 3qt non-stick in near future.

I also need to replace my fry pan so I fried up some pork chops in my Xtrema wok for a test. Beautiful caramelization & the flavor was super, I really do believe those pork chops where the best I had ever made from the flavor to the tenderness. I’ve noticed that whenever I cook meat in the wok, I’ve really noticed a difference in an improved flavor of the meat. I also fried up some eggs in the wok as a test & they came out fine despite the convex bottom of the wok & so I’m looking forward to when I can purchase my Xtrema fry pan!

Because the wok has met my high expectations, I am hoping to purchase a lot more Xtrema pieces. Even the bake ware is on my wish list. I would have loved to have used the 5x7 Xtrema bake pan for my Tamale Pie ---I used my Xtrema Wok for the prep work (because I use so many vegetables & need a large pan to hold it all!). The customer service is personal, friendly & has a quick turnaround time. Before I made my initial Xtrema Wok purchase, I had a lot of questions & Bob Bergstrom was quick to respond & explained all of my questions.

I’m recommending Xtrema to all my friends & family. ~~Here’s to a healthy life!

Xtrema Baked Penne Pasta

Xtrema Italian Baked Penne Pasta --

Greetings friends and Fellow Foodies,

Check out this Xtremely tasty and simple baked penne we cooked up over the Christmas Holiday for over 20 Xtremely happy and satisfied guests. This is a quick and easy way to impress family and friends, or to entertain guests at a small or large function.

What you need:

1 Red Pepper chopped

1 Yellow Pepper chopped

1 medium Vidalia Onion Chopped

Brown 1/2 lb of loose Italian Hot Sausage

Add 1/2 cup of Sun Dried Tomatoes

Add 2 diced Garlic Cloves

Sprinkle Sea Salt and Black and Red Pepper to add some Xtrema Kick

1 and 1/2 jars of Newman's Own Sockarooni Sauce

Layer with 16 oz of Mozzarella Cheese

2 lbs of Penne Pasta

What to do:

Saute the chopped onions, peppers, sun dried tomatoes and brown the Hot Italian Sausage.

Sauce- Add the chopped onions, peppers, and browned Hot Italian Sausage to the Sockarooni Sauce and mix well.

Pasta- Boil as directed on the box using the Xtrema 5.5 qt. Sauce Pot

Using the Xtrema 3.75 Oblong Baking Dish, layer as follows;

Start with just sauce at the bottom of the pan; add layer of pasta

Add layer of Sockarooni Sauce and chopped vegetables

Add layer of mozzarella cheese

Repeat these steps one more time

Garnish with crushed Red Pepper, and fresh basil

Bake at 375 degrees for approximately 20-25 minutes or to brown and bubbly

Let cool for around 5 minutes and bring the dish straight to the table for a delicious Xtrema Hot Italian feast!

When I received my order the first thing I did was to test it out. First I boiled water for hot chocolate. Wow! Huge difference, the hot chocolate was rich, mush richer than previously made using a stainless steel teapot. Then I fried an egg in the Xtrema skillet and in a brand new Rachel Ray skillet. Unbelievable! The eggs were different colors, texture and flavors. I’ve now been using the cookware for several weeks and am extremely pleased with the product. Xtrema Chicken Stir Fry

What's Cooking Friends???

Wow, I just received the new Xtrema Ceramic 11’ Wok and just had to try it out. So we hit the local grocery store and picked up all the fixings for a wonderful Xtrema Stir Fry feast. Stir fry is a simple, yet very tasty meal and you can always add your own personal style and flair to it. We stayed pretty basic with this dinner and just used boneless chicken breast, and all the fresh vegetables. (Carrots, mushrooms, red and orange peppers, onions, and broccoli)

So we fired up the stove, through some EVO in the Xtrema Wok and added the cut chicken breast first. While the chicken was starting to cook, we chopped up the veggies and then added them to the chicken in the wok. We added some Pineapple-Wasabi Soy Sauce to give the Stir Fry some Xtrema flavor.

We were running short on time so we just picked up some delicious vegetable fried rice at our local Chinese Take-Out. Talk about quick and simple. We heated the rice in the Xtrema saucepot and then it was time to serve it up. Presto, we covered the rice with the chicken-veggie stir fry and we were eating in less than 30 minutes. Wow, was it full of flavor. I must say, the ceramic wok really brought out the zest in the chicken and veggies.

Xtrema Hot Chili and Cheese

Here is another quick and tasty recipe from are friend and fellow cook, Vinie from Brooklyn, New York.

Brown 1 lb chop meat and 1 chopped onion in a 3.5 Qt saucepot

Then drain the liquid.

Stir in one 16 oz can of tomato sauce, one 16 oz. jar of salsa, 1 can of red kidney beans, one packet of McCormick Chili seasoning mix.

Add a cut up jalapeño pepper if you like it hot,and we sure like it Xtrema Hot!!

Add one cut up red pepper and one cut up green pepper.

You can serve this with either white rice or tortilla chips.

Seafood Paella The Xtrema Way

Seafood and Rice-- The Xtrema Version of Paella

This delicious recipe comes to us from our good friend Vinnie, from Brooklyn, NYC. He loves to cook with Xtrema and we thought we would share this wonderful seafood meal with you. It's a simple dish and it is sure to Wow your guest. We hope you enjoy this and happy cooking. Remember, the Xtrema Way, is the Only Way. Healthy cooking for healthy living!! That's Xtrema!!!

Sauté 4 cloves of cut garlic and one chopped onion with some olive oil in 5 1/2 Qt sauce pot.

Add one 16 oz can of crushed tomatoes and 8 oz of water. Add fresh basil, oregano, salt and pepper. (Let this cook for 20 minutes.)

Add clams and mussels and cover pot, cook until the clams and mussels open their shells.

Add shrimp until they turn pink and I cook yellow rice separately and add to fish.

Sometimes, I cook Linguine and call that frutti de mare. firm. You can also add a cut up lobster to this dish. If you do add the lobster, put it in the pot along with the mussels. If you need more liquid, you can add water or bottled clam juice.

1lb. large shrimp, 2 lbs. mussels, 2 dozen clams

Whats Cooking Today?

It was a beautiful hot summer night here in Maryland and we decided to fire up the grill, break out the Xtrema Cookware and cook up some delicious hot Italian sausage topped with fresh onions and peppers.

We are by no means cooking experts or gourmet chefs, we just love food and cooking with Xtrema! This is a quick and simple meal. Here is what we did--

Diced up some fresh onions and peppers from the garden, then dropped them into the 12-inch Xtrema brassier skillet with a bit of EVO and cooked them on medium heat for 10 minutes.

While the onions and peppers where sauteing on the stove, we fired up the grill and cooked up the hot sausage. We added a bit of sun dried tomato salad dressing to add a bit of flavor to the sausage. When the sausage was cooked, we placed them on the Xtrema Skillet and garnished them with fresh parmesan and parsley. We then melted the cheese on the grill and brought the skillet right to the table. Hot and tasty!!!

For a side, we chopped up a few potatoes, added some seasoning salt and oil and baked them in the over for about 20 minutes.

Preparation time was just around 30 minutes or less. Not bad at all. Check out the finished work and WOW was this good.....XTREMA GOOD!
